This is our first blog section dedicated to briefing the reader on the way we do things at Knockderry and how we design and deliver our menus. We offer a choice of menus with regular incremental changes so that frequent customers will see altogether different menus from one visit to the next.
Genuine Scottish Country House Hotels have a flavour of their own and whilst traditional, Knockderry nevertheless offers innovative and varied menus with the emphasis on fresh Scottish produce to ensure that our menus reflect the context of the seasons as well as fresh ideas and food.
How do we do this?
We like to involve the whole team in menu and dish design thus giving everyone the chance to bring their ideas to the table (ouch!). Each dish is examined for quality, interest, ingredients and if we are satisfied that it is worth inclusion we proceed to a tasting. Changes in presentation and content may take place before the penultimate tasting at which any final amendments are made.
Beth, the owner, continues to be involved in this process and between us we agree upon the final dish before adding it to the menu. The most important tasting is by the customer. Every new menu or dish delivery is a bit like an opening night – we wait a little nervously for news of the reception and thereafter we concentrate on consistency of delivery.
