Rosette Experienced Sous Chef

As current holders of Small Country House Hotel of the Year for Argyll and Bute and Loch Lomond, and Independent Hoteliers of the Year, Knockderry House has a an excellent reputation for seasonal, local, and Scottish food served with flair and imagination.

We are now looking for a sous chef keen to join this passionate and committed team.

As part of a small kitchen brigade you will be an integral part of the kitchen team, assisting the head chef with menu planning, costing and training. You will be expected to help the head chef maintain, deliver and execute all aspects of running a successful kitchen operation. In particular:

Responsibility for the kitchen department, food costing, ordering, food and health and safety
Day to day support for the head chef in carrying out all duties required
Ensuring that all dishes are prepared with attention to detail and to the highest standard
Assisting the Head Chef with the kitchen brigade, motivating the team and sharing knowledge, training and developing chefs.

The successful candidate with be passionate about food and delivering first class hospitality to our guests. You will be organised, an excellent communicator with experience of a similar quality of operation.

The ideal candidate for this position must have worked in similar environment, with experience in a supervisory front of house role, serving food and beverage and dealing with customers. The role will involve:

  • Assisting the Hotel Manager
  • Responsible for day to day operational activities and dealing with any issues that may arise
  • Excellent Customer Service skills and effective management of the team
  • Main point of contact whilst on duty
  • Delivering excellence in customer service and ensuring consistency
  • Strong Food and Beverage Background
  • Assisting in ensuring all set processes and procedures are adhered to
  • Excellent organisational and communication skills
  • Experience in a similar role

You will be unafraid of hard work and happy to work as part of a close knit team. You must be able to demonstrate a courteous manner yet be focused on providing a consistently high standard of customer care.This is a part time position will be at least 3 days per week with the opportunity for more shifts during holidays and busy periods. Trainee Apprentice Manager

Modern Apprenticeship in Hospitality Management
Knockderry House is offering a Modern Apprenticeship in Hospitality Management for a individual keen to make the first step into hospitality. The successful candidate will be able to demonstrate a real desire to work in this industry. You will work alongside the management team learning how to run and operate a small country house hotel. You will be trained in all aspects of running a hotel, and gain experience across all departments including Housekeeping, Food and Beverage service, Stock Control, Function Management, Bar Supervision, Reception Management, Advertising and General Hotel Duties.

The position will involve both formal and on the job training in the form of an SVQ Level 3 in Hospitality Supervision and Leadership which will form the basis of your learning. In addition will work alongside a Vocational Learning Advisor who will visit you on a regular basis, to deliver the training and observe you in the workplace.You will receive formal training in a wide range of core subjects including :
• Leadership and team management
• Food Hygiene
• Health and Safety
• Personal License Certificate
• Customer Service
• Wine Appreciation and Service

Hours and Salary
Approx 40 hrs per week or 1920 hrs per year / 5 days out of 7.
Salary: £890.00 per month

Skills, Qualifications and Personal Qualities
The successful applicant must be 18 or over
