Knockderry House has a small and close knit team.  We are passionate about our customer service and are constantly striving to improve what we offer. Sous Chef

Knockderry Country House is a small 4 star country house hotel with a 2 Rosette restaurant and recent holders of Romantic Hotel of the Year at the 2016 Scottish Hotel Awards.  We are now looking for an experienced Sous Chef with rosette experience to join our small kitchen brigade.

We offer quality dining using fresh Scottish produce to both residents and non residents in our 32 seater restaurant.

You will be an integral part of the kitchen team, assisting the head chef with menu planning, costing and training. You will be expected to help the head chef maintain, deliver and execute all aspects of running a successful kitchen operation. In particular:

  • Work with the head chef to produce diversified menus in accordance with the restaurant’s policy and vision
  • Come up with new dishes which appeal to customers.
  • Establish the working schedule and organise the work in the kitchen so that everything works like a “well-oiled machinery’’.
  • Produce high quality dishes that follow up the established menu and level up to location’s standards, as well as to clients’ requirements;
  • Plan the food design in order to create a perfect match between the dish’s aspect and its taste;
  • Assist in training and developing chefs in order to reach the high standards of the location;
  • Training the auxiliary kitchen staff in order to provide best results in minimum time and using at the maximum the available resources;
  • Maintain order and discipline in the kitchen during working hours;
  • Make sure the hygiene and food safety standards are met in all stages of food preparation, starting with the ingredients and ending with the finished dish which leaves the kitchen door;
  • Make sure that the professional equipment is in good conditions and signal any malfunction before it affects the staff or the clients.
  • Responsibility for the kitchen department, food costing, ordering, food and health and safety
  • Day to day support for the head chef in carrying out all duties required
  • Ensuring that all dishes are prepared with attention to detail and to the highest standard.
  • Assisting the Head Chef with the kitchen brigade, motivating the team and sharing knowledge, training and developing chefs.

We are 20 minutes drive from Helensburgh and can offer live in accommodation if required.

In summary we are passionate about food and delivering first class hospitality to our guests and will look for a candidate that is able to demonstrate the same characteristics.

Salary £21,000-£24,000

Trainee Manager – Modern Apprenticeship

Knockderry House is a small country house hotel with a strong reputation for good seasonal and Scottish food. We are currently looking for a trainee modern apprentice to join us. The role is a 3 year management development position where you will learn all aspect of hotel management- if you are looking for an opportunity to work in a local hotel with a small but hardworking team then please send us your cv explaining why you are the right candidate for us. The main duties of a trainee are to assist the Duty Manager run the front of house and housekeeping operation on a day to day basis.

Tasks will include:
Setting up for breakfast, lunch or dinner service.
Assisting serve breakfast / lunch or dinner.
Cleaning food areas including the restaurant and bar as well as equipment, crockery and cutlery.
Assisting Housekeeping department service rooms In addition, you may be asked to assist with any weddings or events that we hold at the hotel.
Experience is desirable but not essential as we are looking for a hardworking and reliable individual who is keen to work in a team.

Additional Requirements: Modern apprenticeship are only available to candidates under 25 years of age. The hotel is in a rural environment and thus limited public transport requires the applicant to be able to drive or have their own transport.This role would not suit someone with other working or lifestyle commitments.

Trainee Chef – Modern Apprenticeship

We are currently looking invest in a modern apprentice to work within our Kitchen department. The position is based on a two year fixed term apprenticeship and will offer the right candidate the opportunity to train within a professional kitchen whilst also obtaining a SVQ qualification in professional cookery. If you are budding young chef that thinks they can handle the heat then please send us your CV explaining why you are the right candidate for us.

Main Duties

The main duties of the apprentice Chef are to assist the Head Chef and kitchen team in daily kitchen operation. Skills you can expect learn are as follows

  • Basic vegetable preparation
  • Basic baking and dessert preparation
  • Breakfast cookery
  • Basic butchery
  • Basic sauce and ladder preparation
  • Kitchen operations and food service
  • Food safety and Hygiene

Experience The following skills, qualities and experience are required. The successful candidate will preferably have experience of working in some capacity in the hospitality industry, however it is not essential as reliability, enthusiasm and a strong work ethic is of greater importance.

  • Good interpersonal skills.
  • Must be well organised.
  • Ability to multi-task.
  • Good written and numerical skills
  • Enjoys working as part of a team.
